Aloo Gobi Masala

Ingredients

  • 2 tablespoons vegetable oil
  • 1 teaspoon cumin seeds
  • 1 large onion, finely chopped
  • 1 tablespoon ginger-garlic paste
  • 1-2 green chilies, slit (optional)
  • 2 medium tomatoes, chopped
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1.5 teaspoons coriander powder
  • 1 teaspoon salt, or to taste
  • 2 medium potatoes, peeled and cut into 1-inch cubes
  • 1 small head cauliflower, cut into medium florets
  • 1/2 cup water
  • 1/2 teaspoon garam masala
  • Fresh cilantro, chopped, for garnish

Method / Preparation

Follow step-by-step instructions
  1. Heat vegetable oil in a large pan or kadai over medium heat. Add cumin seeds and let them splutter.
  2. Add the chopped onion and sauté until golden brown, about 5-7 minutes.
  3. Stir in the ginger-garlic paste and green chilies (if using). Cook for 1 minute until fragrant.
  4. Add the chopped tomatoes and cook, mashing occasionally, until they soften and the oil starts to separate, about 5 minutes.
  5. Mix in the turmeric powder, red chili powder, coriander powder, and salt. Cook for 1-2 minutes, stirring continuously.
  6. Add the potato cubes and cauliflower florets to the pan. Toss well to coat them evenly with the spice mixture.
  7. Pour in 1/2 cup of water, cover the pan, and reduce heat to low. Cook for 15-20 minutes, or until the potatoes and cauliflower are tender, stirring occasionally to prevent sticking.
  8. Once the vegetables are cooked through, remove the lid. Increase heat to medium-high and cook for another 3-5 minutes to evaporate any excess moisture and achieve a slightly drier consistency.
  9. Sprinkle with garam masala and garnish generously with fresh chopped cilantro.
  10. Serve hot with roti, naan, or rice.
