Chole Bhature
Chole Bhature ek prasiddh North Indian dish hai, jo chole (chickpeas) aur bhature (fried bread) ka mishran hota hai. Yeh ek flavorful aur chatpata dish hai, jo logon ke dilon par raaj karta hai.

Kabuli chane ko acche se dho kar pani mein 6-8 ghante ya raat bhar ke liye bhigo kar rakh dein.
Bhigoye hue chane ko pressure cooker mein pani daal kar pakayein. 3-4 whistles tak pakayein ya jab tak chane naram na ho jayein.
Ek pan mein tel garam karein aur usme jeera daal kar saute karein jab tak jeera crackle na karein.
Ab pyaaz aur hari mirch daal kar golden brown hone tak saute karein.
Adrak-lassan ka paste daal kar use bhunein jab tak raw smell na chala jaye.
Tamatar daal kar use naram hone tak pakayein.
Ab, chole masala, lal mirch powder, haldi powder, dhania powder, aur namak daal kar masalon ko acche se mix karein.
Pakayein masalon ko 2-3 minutes tak, taki woh acche se combine ho jayein.
Ab pakaye hue chane daal kar use acche se mix karein.
Pani daal kar chole ko ek boil aane tak cook karein.
Chole ko garnish karne ke liye hara dhania se sajayein.
For Bhature:
Ek mixing bowl mein maida, sooji, dahi, baking powder, baking soda, chini, tel, aur namak daal kar mix karein.
Thoda-thoda pani daal kar ek soft dough bana lein. Dough ko 2-3 ghante ke liye rest karne ke liye rakh dein.
Gas par ek deep frying pan ya kadhai mein tel garam karein.
Dough se chote-chote balls bana lein aur use belan ki madad se round shape mein bail lein.
Deep frying pan mein bhature ko dal kar dono taraf se golden brown hone tak fry karein.
Fry kiye hue bhature ko absorbent paper par rakh kar excess oil absorb hone dein.
Chole Bhature taiyar hai! Isse hari mirch, pyaaz, aur nimbu ke saath serve karein aur swadisht North Indian delicacy ka maza uthayein.
