Ingredients

  1. 2 cups grated bottle gourd (doodhi), squeezed to remove excess water
  2. 1 cup besan (gram flour)
  3. 1/2 cup rice flour
  4. 1 teaspoon ginger-green chili paste
  5. 1/2 teaspoon turmeric powder
  6. 1/2 teaspoon red chili powder
  7. Salt to taste
  8. 2 tablespoons oil
  9. Optional: 1/2 teaspoon baking soda
  10. 1/4 cup chopped fresh coriander

Method / Preparation

Follow step-by-step instructions
  1. In a large bowl, combine the grated bottle gourd with besan, rice flour, ginger-green chili paste, turmeric, red chili powder, salt, and chopped coriander.
  2. Add oil and, if using, baking soda; mix well to form a thick, uniform batter.
  3. Cover the mixture and let it rest for 15 minutes.
  4. Shape the batter into small cylindrical dumplings (muthias) with your hands.
  5. Place the muthias in a steamer and steam for 25–30 minutes until thoroughly cooked and spongy.
  6. Serve hot with a side of green chutney.
