Ingredients

  1. 1/2 cup split yellow moong dal, soaked for 2 hours
  2. 1/2 cup singhara atta (water chestnut flour)
  3. 1 cup water (adjust as needed)
  4. 1/2 teaspoon rock salt (sendha namak)
  5. 1/2 teaspoon cumin seeds
  6. 1 small green chili, finely chopped (optional)
  7. 1/2 teaspoon grated ginger (optional)
  8. 1 tablespoon ghee (or oil)
  9. Fresh coriander leaves for garnish

Method / Preparation

Follow step-by-step instructions
  1. Heat ghee in a heavy-bottomed pan over medium heat and add cumin seeds. Allow them to crackle.
  2. If using, add grated ginger and chopped green chili; sauté for 1 minute.
  3. Add the soaked and drained moong dal, stirring gently for 2 minutes.
  4. Gradually incorporate the singhara atta while stirring continuously to prevent lumps.
  5. Pour in water and add rock salt. Bring the mixture to a boil, then reduce the heat and let it simmer for 15–20 minutes until the dal is tender and the khichdi reaches a cohesive consistency.
  6. Garnish with freshly chopped coriander leaves and serve the khichdi warm as a light, fasting-friendly dish.
