Ingredients

  • 250g paneer, cut into 1-inch cubes
  • 1/2 cup thick curd (yogurt), whisked
  • 1 tablespoon ginger-green chili paste (adjust to taste)
  • 1 teaspoon cumin powder
  • 1 teaspoon rock salt (sendha namak), or to taste
  • 1 tablespoon lemon juice
  • 2 tablespoons oil or ghee, for cooking
  • Fresh coriander leaves, chopped, for garnish (optional)

Method / Preparation

Follow step-by-step instructions
  1. In a large bowl, whisk the thick curd until smooth.
  2. Add ginger-green chili paste, cumin powder, rock salt, and lemon juice to the curd. Mix well to form a marinade.
  3. Gently add the paneer cubes to the marinade, ensuring each piece is evenly coated. Cover the bowl and let it marinate for at least 15 minutes (or up to 30 minutes in the refrigerator).
  4. If using, thread the marinated paneer cubes onto skewers.
  5. Heat 1 tablespoon of oil or ghee in a non-stick pan over medium heat.
  6. Carefully place the paneer cubes (or skewers) in the hot pan. Cook for 2-3 minutes on each side until golden brown and slightly charred.
  7. Remove from the pan and serve hot, garnished with fresh coriander leaves and a squeeze of lemon juice, if desired.
