  • 1 teaspoon rock salt (sendha namak), or to taste
  • 1/2 teaspoon black pepper powder
  • 2 tablespoons lemon juice
  • Oil for shallow frying

Method / Preparation

Follow step-by-step instructions
  1. In a large bowl, combine the mashed potatoes, crushed roasted peanuts, chopped green chilies, grated ginger, chopped coriander leaves, rock salt, and black pepper powder. Add the lemon juice.
  2. Mix all the ingredients thoroughly until well combined. The mixture should be firm enough to shape.
  3. Divide the mixture into 10-12 equal portions and flatten each portion into small, round patties or cutlets.
  4. Heat oil in a non-stick pan over medium heat for shallow frying. The oil should be hot enough but not smoking.
  5. Carefully place 3-4 patties in the hot oil, ensuring not to overcrowd the pan.
  6. Fry the patties for 3-4 minutes on each side, or until they turn golden brown and crispy.
  7. Remove the fried patties from the pan and place them on absorbent paper to drain excess oil.
